Black Bean Dip with Rainbow Crudités

If you’re trying Veganuary, or just looking to up your plant intake, this Black Bean dip is a must try!

Rich plant based protein and healthy fats, as well as providing that all important colourful fibre: a gut nourishing, delicious snack!

Ingredients
Serves 4

1 400g Tin of Black beans
2 Large cloves of Garlic
1tbsp Tahini
The juice of a Lime
1tbsp Olive Oil
Salt and Pepper
Chilli Flakes (optional)
Fresh Coriander

For Dipping:
Vegetable crudités of choice – the more colour, the better!

Method
Rinse the black beans thoroughly (this makes them easier to digest).
Crush the garlic into a blender/ food processor and add the tahini, olive oil and lime juice.
Pour in the black beans and add the fresh herbs and spices.
Season with salt and pepper.
Blitz until smooth.
Serve with the rainbow crudités and get dipping!
