Banana and Berry Breakfast Bars

Whether you’re looking for a mid morning energy boost, or a quick and easy on the go breakfast, this recipe could be a new go to!

Ingredients
Makes 8-10
175g Rolled Oats
2 Ripe Bananas
75g Pecans
25g Desiccated Coconut 
5 Dates
1tbsp Tahini
1 Handful of Chopped Frozen or Fresh Berries 

Method
Add the pecans, coconut, de-stoned dates and bananas to a blender. Spoon in the tahini and blitz.
Once smooth, add the mixture to a large bowl before gradually adding the oats. Mix until ingredients are well combined.
Slice the berries (if frozen, they may need a couple of minutes to soften) and then add them to the mixture, leaving some for the topping.
Grease a loaf tin and spoon in the oat mixture, pressing so that it is compact.
Top with sliced berries.
Bake in the oven for 35 minutes on 180c, checking throughout. Leave to cool and then slice into bitesize portions and store in an airtight container in the fridge.
Enjoy as a snack or with yogurt and berries as part of a healthy breakfast! Yum!
